I would love this kind of place but agree that it can't be boring and bland. Places like Nando's while limited in choice make healthy and tasty food and it's about doing similar across wider dishes plus having the info available for diners. Personally I think making it health focused rather than just bodybuilders would make it much more appealing as tons of people I know who are gluten free, would prefer no dairy etc etc and they are a bigger segment of the population than bodybuilders.

I am gluten and dairy free and eating out can be difficult. I find that if I pay more in a restaurant I am allowed to be picky whereas in cheaper restaurants I often have to explain what gluten is (no joke). 

Restaurants appear to be getting more savvy, in my experience.

I haven't eaten there but the menu specifies calories, carb, protein and fat content which is definitely a good start!
